
SIMPLY RED - Serves 2-3
Tomato, Olive Oil and Premium Cous Cous
Ingredients
- 1 x 125g sachet Ainsley Harriott Premium Cous Cous
- 10ml (2 tsp) olive oil
- 175ml (1 small teacup) boiling water
- 30ml (2 tbsp) sun-dried tomato paste
- 6 cherry tomatoes, quartered
- 30ml (2 tbsp) fresh chopped Basil
- Salt & freshly ground black pepper
Method
Place the Ainsley Harriott Premium Cous Cous into a medium
sized saucepan.

Add the olive oil and the boiling water.
Bring back to the boil. Remove from the heat, cover and leave for
5 minutes.

Return to a low heat. With a fork, gently stir in the sun-dried tomato paste until well mixed and then the cherry tomatoes. Remove from the heat.
Gently stir in the chopped basil.
Season to taste before serving.
SERVING SUGGESTION: Serve with grilled tuna and a green salad.
