
PORK POCKETS - Serves 4
In this life - It's time to pick a pocket or two!
Ingredients
- 15g (˝oz) butter
- ˝ red onion (chopped)
- 4 spring onions, chopped
- ˝ tsp garlic puree or 1 garlic clove, crushed
- 50g (2oz) ready-to-eat apricots, chopped
- 15ml (1 tbsp) chopped coriander
- 1 x 100g or 1 x 110g sachet Ainsley Harriott Spice Sensation
Cous Cous - 4 pork loin steaks, 2.5cm (1") thick
- Juice of ˝ lemon
- 15ml (1 tbsp) olive oil
- 15ml (1 tbsp) honey
Method
Melt butter in a medium sized pan.
Sauté the onion, spring onions and garlic for 5 minutes.
Prepare the Ainsley Harriott Spice Sensation Cous Cous according to the instructions on the carton or sachet. Stir in the onions, coriander and chopped apricots.
Make a pocket in the pork steaks and fill with the Cous Cous mix. Reserve any remaining mix.
Mix together the lemon juice, oil and honey and use to brush over the steaks.
Heat a frying pan and cook the pork for 5 minutes on each side over a medium heat.
Place in a covered dish and bake in the oven for a further 20 minutes until cooked through.
SERVING SUGGESTION: Serve immediately with lots of oven roasted vegetables and toasted ciabatta bread.
