Nice 'n' spicy tender Beef Goulash, heaven when you're hungry!
Ingredients
- 3-4 tbsp vegetable oil
- 1 large onion - diced
- 3 tbsp paprika
- 700g cubed beef
- ½ green pepper - coarsely chopped
- 1 tbsp tomato puree
- 1½ tsp salt
- 300ml light beef stock
- 1 x 300g Tray of Ainsley Harriott Rice & Simple Long Grain Rice
Method
Heat oil in a heavy wide based pan. Add onion and cook over low heat until lightly yellowed.
Add paprika and blend well. Add meat, green pepper, tomato puree, salt and beef stock.
Cover and simmer gently for about 1½ hrs until meat is tender, stirring occasionally.
Prepare the Ainsley Harriott Rice & Simple Long Grain Rice according to the instructions on the carton.
TO SERVE: Serve on a bed of Long Grain Rice.
