
JUST JOSHIN' - Serves 3-4
Go on then, treat yourself to this luscious Lamb Rogan Josh
Ingredients
- 2 tbsp vegetable oil
- 450g cubed lamb
- 2 medium onions - chopped
- 2 cloves garlic - finely chopped
- 2 tbsp medium curry powder
- 4 cardamon pods - cracked
- 2 tsp paprika
- 4 tbsp natural yoghurt
- 400g tin chopped tomatoes
- 300ml pint water
- ½ tsp garam masala
- 1 x 300g Tray of Ainsley Harriott Rice & Simple Basmati Rice
- 1 tbsp finely chopped fresh coriander leaf
Method
Heat the oil in a large wide based saucepan
Brown the lamb cubes and set aside.
Add onions to the pan and fry for 5 minutes until golden brown
Add garlic, curry powder, cardamon pods and paprika and stir for 30 seconds.
Add lamb and any juices then stir through the yoghurt 1 tblsp at a time until well blended.
Stir through the tomatoes and water. Bring to the boil then simmer for 1 hour stirring frequently.
Stir through the garam masala before serving.
Prepare the Ainsley Harriott Rice & Simple Basmati Rice according to the instructions on the carton.
TO SERVE: Serve with freshly chopped coriander.
