Salad, Mint and Olive Oil with Premium

Ingredients
- 1 x 125g sachet Ainsley Harriott Premium Cous Cous
- 10ml (2 tsp) olive oil
- 425g can chopped tomatoes
- ¼ cucumber, chopped into small dice
- ¼ red onion, finely chopped
- ¼ tsp garlic puree
- 15ml (1 tbsp) fresh chopped mint
- 15ml (tbsp) fresh chopped parsley
- Salt and freshly ground black pepper
Method
Place the Ainsley Harriott Premium Cous Cous and olive oil into a medium sized bowl.
Add the chopped tomatoes (including juice). Stir well, then leave for 10 minutes.
Add vegetables and herbs.
Cover and refrigerate for at least an hour.
Season to taste before serving.
SERVING SUGGESTION: Accompaniment to barbecued chicken, chops, fish or kebabs.
