Ingredients
- 1 x 100g or 1 x 110g sachet Ainsley Harriot's Spice Sensation
Cous Cous - Small bunch broccoli
- Small bunch spring onions
- 1 bag of pine nuts
- 1 large tomato
- 1 lemon
- 1 red or green pepper
Method
Prepare the Ainsley Harriott Spice Sensation Cous Cous according to the instructions on the carton or sachet.
Whilst the Cous Cous is standing for 5 minutes, chop the broccoli into small pieces and microwave for 1 minute to blanche.
Toast the pine nuts, finely chop the green pepper, spring onion and tomato and place into a large mixing bowl.
Cook the Cous Cous for a further 30 seconds in the microwave, toss it into the large mixing bowl and add the broccoli
Cut the lemon in half and squeeze over the mixture and mix together. Season to taste.
Serve hot or cold.
OTHER IDEAS: Also nice with a pack of Discover marinated feta cheese pieces mixed through it!
