Chorizo Hash with Fried Egg
Ingredients
- 1 x 150g sachet of Ainsley Harriott Fabulously Flavoured Moroccan Magic Cous Cous Stuffing
- 2 tbsp olive oil
- 1 small, red, onion finely chopped
- 100g Chorizo (diced)
- 2 eggs
- Salt and Pepper
Method
Make up Cous Cous Stuffing as directed on the pack from steps 2-5 and leave to cool.
Heat 1 tbsp of olive oil in a frying pan over medium heat, fry onion and chorizo for 2-3 minutes. Mix in the prepared stuffing and continue to fry until lightly golden and crispy.
Fry the eggs in 1 tbsp oil sunny side up. Season with salt and pepper.
Spoon the stuffing onto two warm plates and serve with fried egg on top.
