Cheese Flavour Risotto with Roasted Onion and Butternut Squash
Ingredients
- 300g butternut squash, peeled and diced
- 1 red onion, peeled and cut into chunks
- Olive oil
- Pinch of dried thyme
- Salt and freshly ground black pepper
- 1 x 140g sachet of Ainsley Harriott Cheese Flavour Risotto
- Parmesan cheese to serve
Method
Preheat oven to 220°C/425°F/Gas Mark 7.
Place butternut squash and onion into baking tray, drizzle over a little olive oil, sprinkle over thyme, season and pop into hot oven for 20-25 minutes until lightly charred and cooked through.
Prepare Ainsley Harriott Cheese Flavour Risotto according to the instructions on the carton.
Stir in the roasted squash and onion and serve with grated Parmesan cheese.
