Singapore Pork, Broccoli and Spring Onion Stir-Fry

Ingredients

  • 1 x Ainsley Harriott Singapore Rice
  • 1-2 tbsp vegetable oil
  • 260g pork fillet, cut into 4cm x 1cm strips
  • 1 clove garlic, thinly sliced
  • 100g tenderstem broccoli, cut in half
  • 4 spring onions cut into 4cm length
  • for the sauce
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp honey
  • Juice of ½ lime
  • A good grinding of black pepper
  • ½ tsp cornflour mixed with 1 tbsp water
  • Sesame seeds to serve

Method

STEP 1

Prepare the Ainsley Harriott Singapore Aromatic Spice Rice according to packet instructions, and keep to one side with lid on. In a small bowl, mix together all the sauce ingredients and set aside

Heat the oil in a wok over a high heat, add the pork strips and stir-fry for 2-3 minutes until golden, then remove the pork with a slotted spoon onto a plate

Return the wok to the heat add a little more oil & the garlic, then after 30 seconds throw in the broccoli and spring onions and stir-fry for 2-3 minutes

Return the pork to the wok pour over the sauce ingredients, and then stir and cook for 2-3 minutes more until thickened

TO SERVE 

Divide rice onto plates with the pork and sprinkle over the sesame seeds.
