
Creamy Vegetable Spelt with Melting Gorgonzola & Roasted Cherry Tomato Vine

Taste the sunshine of Italy with this quickly prepared recipe, where Ainsley Harriott brings to life the combination of creamy blue cheese and the richness of sun ripened tomatoes.
Ingredients
1 x 150g sachet of Ainsley Harriott Creamy Vegetable Spelt
1 cherry tomato vine, with 5-7 tomatoes
5ml (1 tsp) olive oil
100g (4oz) Gorgonzola, diced
sea salt and freshly ground black pepper
Step 1
Preheat the oven to 200C (400F), Gas mark 6. Place the tomato vine in a small roasting tin and drizzle with the olive oil. Season to taste and roast for 10-12 minutes until the tomatoes are tender and the skins have split.
Step 2
Meanwhile, prepare the Ainsley Harriott Creamy Vegetable Spelt according to instructions on the sachet.
Step 3
Place the cherry tomato vine on top before serving.
Step 4
Other ideas: Use any other blue cheese instead of the Gorgonzola such as Dolcelatte or Cashel Blue and serve with a separate bowl of lightly dressed watercress salad.
