Caribbean Stuffed Grilled Avocados with Hot Pepper Lime Dressing

Add some sunshine to your plate with these grilled ripe avocados stuffed with the vibrant flavours of the Caribbean. So simple to make and packed full of flavour they’re great for a quick lunch or as a side for a summer barbecue. If you’re not an avocado fan the filling is also great in a wrap.

Method

Prepare the couscous according to the packet instructions and fluff with a fork.

Mix together the mayonnaise, hot sauce and lime juice to taste. Loosen with a little water, season and set aside.

Toss the pepper, cucumber, tomatoes, coriander and spring onion through the couscous. Season and add lime juice to taste. Toss to coat evenly.

Preheat the barbecue or a ridged griddle pan over a medium heat.

Slice the avocados in half and remove the stone, squeeze over a little lime juice and then brush with oil. Brush the grill or griddle pan with a little oil and place the avocados cut-side down. Grill for 2-3 minutes or until chargrill marks appear. Remove from the heat. Fill the avocado with the couscous and drizzle over the Hot Pepper Lime Dressing.

Ingredients

  • For the Grilled Avocados
  • 1 x packet of Ainsley Harriott Caribbean-inspired Couscous
  • 1 small yellow or red pepper, deseeded and finely diced
  • ¼ cucumber, finely diced
  • 6 cherry tomatoes, chopped
  • 1 tsp finely chopped coriander
  • 1 spring onion, finely sliced
  • ½ lime for squeezing
  • 2-4 large ripe yet firm avocados
  • 1-2 tbsp olive oil, for brushing
  • For the Dressing
  • 2-3 tbsp mayonnaise
  • dash of Ainsley Caribbean Creations Hot Pepper Sauce*
  • ½ lime for squeezing
