
Cheesy Caribbean Burrito with Chilli & Lime Avocado
Our microwaveable Caribbean Couscous & Grains are great for quick and easy lunches and these wraps make a tasty change from sandwiches. The Couscous, Rice N’ Beans are full of Caribbean spice so work perfectly with the tasty toppings of chilli-lime avocado, crunchy red pepper and cheese in this burrito-style wrap. Served hot or cold these are sure to please!
Method
Prepare the grains according to the packet instructions and fluff with a fork to separate the grains.
In a bowl mash the avocado with a fork, leaving plenty of texture if you like. Stir in the chilli, season and add lime juice and seasoning to taste. Set aside.
To enjoy as a cold wrap – place the tortilla on a flat surface and top with grains, red pepper, spring onion, coriander, a good dollop of the avocado and finish with cheddar cheese. Fold up to enclose the filling. Slice the burrito in half and serve.

Fold up to enclose the filling (use a little water to seal the edges if needed). Heat a frying pan over a medium heat and add a drizzle of oil. Add the burrito, seal-side down and gently fry for a minute until golden. Turn and fry the other side until golden. Cut the burrito in half and serve alongside the avocado.

- 1 x pouch of Ainsley Harriott Caribbean Couscous, Rice N’ Beans
- 2 large soft flour tortilla
- ½ red pepper, deseeded and diced
- 1 spring onion, finely sliced
- 60-80g cheddar cheese, grated
- 1 tbsp roughly chopped coriander
- 1 avocado
- ½ -1 red chilli, deseeded and chopped
- ½ lime, for squeezing
