Chicken with Roasted Onion, Spice Sensation and a Pea & Mint Dressing

A delicious and easy chicken traybake with our Spice Sensation Couscous and a fresh and vibrant dressing.


Prepare the couscous according to the packet instructions and fluff with a fork.

Carefully slice the chicken horizontally so that you have two thin fillets.

Mix the paprika, oregano and onion powder together. Stir in the lemon juice and 1 tbsp of the olive oil. Coat the chicken in the mix and leave to marinate for 20 minutes.

Preheat the oven to 200c/180cfan/gas 6

Sit the red onion discs on the base of a baking dish, place the chicken on top and season. Put the tray in the oven and bake for 25 minutes or until the chicken is cooked.

Meanwhile make the dressing: place all the ingredients in a small blender and blitz until smooth. Season with salt and pepper.

Remove the chicken from the tray, add the prepared couscous and stir through the roasted onions and any flavour in the bottom of the tray. Return the chicken, sprinkle with the chopped parsley and drizzle over the pea and mint dressing.



  • For the Chicken
  • 1 x packet of Ainsley Spice Sensation Couscous
  • 1 large chicken breast
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • juice of half a lemon
  • 3 tbsp olive oil
  • sea salt and freshly ground black pepper
  • 1 large red onion, peeled and sliced into 1 cm discs
  • 2 tbsp chopped parsley
  • For the Dressing
  • 4 tbsp yoghurt
  • 4 tbsp frozen peas, thawed
  • 1 clove of garlic
  • handful of fresh mint leaves
  • juice of ½ Lemon
