Couscous, Cucumber & Radish Salad with Mint and Pomegranate

This is a fresh and vibrant salad that’s perfect for summer dining – great on its own or as a side dish. Our Spice Sensation Couscous works beautifully but if you want to add a little more heat try with our Tomato & Chilli.

Method

Prepare the couscous according to the packet instructions.

Mix the cucumber with the salt, place in a colander over a bowl and leave for 20 minutes to remove any excess water.

In a bowl, mix the yoghurt with a squeeze of lemon juice, 2 tbsp olive oil, the dried mint and season with a little salt and pepper.  Rinse the cucumber and pat dry. Add to the yoghurt and stir.

Add a little lemon juice to the couscous along with 2 tbsp of olive oil and stir through to separate the grains.

Place half the couscous on a platter, top with half the cucumber then add more couscous. Finish with the remaining cucumber, sliced radishes, picked mint leaves, pomegranate seeds and drizzle with pomegranate molasses.

  • 1 x packet Ainsley Harriot Spice Sensation Couscous
  • 4 baby cucumbers, sliced into rounds
  • 2 tsp sea salt
  • 8-10 radishes, thinly sliced into discs
  • juice of ½ lemon
  • 4 tbsp olive oil
  • 100g thick Greek yoghurt or plant-based yoghurt
  • 1 tsp dried mint
  • 2 tbsp pomegranate seeds
  • 1 red chilli, sliced into rings
  • small handful mint leaves
  • 1 tbsp pomegranate molasses
