Easy Jerk Chicken Wings & Dutty Loaded Fries

Oh yes this is my kind of footie food – perfect sticky finger nibbles – a little bit naughty but very tasty! For ease I’m using a shop bought jerk seasoning and freshening it up with some fresh thyme, ginger and orange. If you like things spicy feel free to add some scotch bonnet chilli to the marinade. These dirty or dutty fries are a great side dish – cheesy and spicy with a hint of Jerk flavour, what’s not to like?!
Method
Cut the chicken wings through the joints into winglets, discarding the tips (can be used for stock). Place in a large bowl.
Put all of the ingredients for the marinade in a separate bowl and mix well. Add ½ tsp of black pepper and ½ tsp of salt and stir to combine. Reserve a quarter of the marinade and then pour the rest over the chicken in a large bowl. Cover and chill to marinate for at least 2 hours, ideally overnight.
Mix 1 tsp of the reserved marinade with the mayonnaise and chill until needed.
Preheat the oven to 220C/200C fan/ Gas 7 and line a baking tray (or two) with baking paper.
Remove the wings from the fridge 20 minutes before cooking to come up to room temperature. Bake for 25-30 minutes, turning halfway. Turn again and brush with the reserved marinade and cook for another 10-20 minutes (depending on the size of your wings) or until cooked through and nicely brown and crispy. If you want them extra crispy put them under a hot grill for a couple of minutes.
Meanwhile put the oven fries on a baking tray and drizzle with a little oil. Sprinkle with the jerk seasoning and season with salt. Toss to coat. Cook according to the packet instructions. When just cooked remove from the oven and transfer to an oven proof serving dish. Sprinkle over half the chilli, half the spring onion and the grated cheddar. Return to the oven for a few minutes to melt the cheese. Scatter with the remaining chilli rings and onion, chopped tomato, coriander and then finish with the lime zest and dollops of the jerk mayo.

- 1.2 kg whole chicken wings
- 4 tbsp mayonnaise
- For the Marinade
- 2-3 tbsp good quality jerk seasoning (add more/less depending on how spicy you like it)
- 2 tbsp olive oil
- 2 tbsp dark soy sauce
- 2 tbsp brown sugar or honey
- 1 tbsp of fresh thyme leaves, chopped
- 5 cm piece of root ginger, grated
- 2 cloves of garlic, minced
- ½ tsp allspice (optional)
- juice of zest ½ orange
- sea salt & freshly ground black pepper
- For the Dutty Fries
- 600g frozen french fries
- 1 tsp Jerk seasoning
- 1-2 red chilli, deseeded and sliced into rings
- 1 spring onion, sliced
- 150g Cheddar cheese, grated
- 1 large ripe tomato, deseeded and finely chopped
- small handful of coriander, chopped
- zest of 1 lime
