Easy Prawn Lunch Prep Boxes

A tasty, healthy, low-fat and high protein lunch box that can be made the night before. We like to use our Tomato & Chilli Couscous or Sundried Tomato & Garlic for this salad but feel free to use your favourite flavour.


Prepare the couscous according to the packet instructions. Stir in the chopped tomato and 1 tbsp of the parsley.

Toss the prawns in the olive oil, lemon juice and chilli flakes. Heat a little oil in a pan over a high heat. Add the prawns and cook for 2-3 minutes until they change colour and are cooked through. (turning halfway through cooking.)

To assemble the boxes. Place lines of the ingredients into your lunch container. Cover and place in the fridge until needed. Before serving drizzle with a little oil and season with salt and pepper.



  • 1 x packet of Ainsley Harriott Couscous
  • 1 tomato, chopped
  • 10 raw king prawns
  • juice of 1 lemon
  • 1 tbsp olive oil
  • pinch of chilli flakes
  • salt and pepper
  • 2 tbsp chopped parsley
  • handful of rocket leaves
  • 6 sun blush tomatoes
  • 75g edamame beans, blanched and refreshed
  • wedges of lemon to serve
