
Italian-Style Salad Jar
Salad jars are great to make the night before to have ready for picnics or lunch boxes. This Italian-style salad is full of the flavours of the Med with creamy mozzarella, basil, salty olives and our punchy pesto couscous – delicious!
Method
For best results prepare the Italian Couscous according to the packet instructions. Pour into a bowl, fluff with a fork and allow to cool (to save time you can skip this bit because our grains are ready-to-eat).
Whisk the dressing ingredients together in a small bowl then divide between 2 jars approx 250ml capacity.
Layer the ingredients in the following order: diced cucumbers, some Italian couscous, cherry tomatoes, basil, mini mozzarella, more couscous, olives and rocket. Put the lid on and store in the fridge until ready to eat.
Shake before eating.

- 1 pouch Ainsley Harriott Microwaveable Italian Couscous
- For the Salad
- 75g cucumber, diced
- 10 basil leaves
- 8 cherry tomatoes, halved
- 1 x 285g packet of mini mozzarella balls
- 8 olives, pitted and halved
- 20g rocket
- For the Dressing
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp water
- ½ tsp honey
- pinch salt
