Jamaican Vegetable Curry
Spice up your everyday meals with our Caribbean Creations Curry Pastes. They’re easy and quick to use and full of Caribbean flavour. Try this delicious veggie curry and serve with Ainsley rice, chopped coriander and a squeeze of fresh lime for a fantastic family meal.
Prep time: 10 mins | Cooking time: 25-30 mins
Heat the oil in a saucepan over a medium heat. Add the aubergine & sweet potato and cook for 2-3 mins until lightly browned.
Add the paste, water & chopped tomatoes and stir well. Bring to a simmer and cook for 15 mins, stirring occasionally.
Stir in the green beans & allow to simmer for a further 10 mins. Serve with rice or couscous.

- 1 large aubergine, diced into 2cm chunks
- 380ml water
- 1 sweet potato, peeled and diced into 2cm chunks
- 1 x 400g tin chopped tomatoes
- 100g green beans
- 2 tbsp vegetable oil
