Mango, Mint & Lime Couscous Salad with Toasted Coconut

Fresh mango with a hint of chilli and mint is a delicious combination and it works perfectly with the Caribbean spice in our couscous. A super simple salad with plenty of flavour.


In a dry frying pan over a medium heat toast the coconut flakes until lightly golden. Keep an eye on them because they can easily burn.

Prepare the couscous according to the packet instructions and fluff with a fork. Set aside to cool.

Toss half the herbs and chilli through the couscous and arrange on plates. Top with the chopped mango and scatter over the remaining mint and chilli. Finish with the coconut flakes and a squeeze of lime juice.



  • 2 tbsp coconut flakes
  • 1 x packet of Ainsley Harriott Caribbean inspired Couscous
  • 1 mango, chopped
  • handful of mint leaves, shredded
  • 1 small red chilli, deseeded & finely chopped
  • lime wedges, for squeezing
