
Minted Watermelon, Feta & Couscous Salad
A fresh and vibrant summer salad that’s perfect as a side dish for griddled chicken or fish or just on its own as a light lunch. The sweet watermelon pairs beautifully with the salty cheese and there’s a little kick of chilli from our Tomato & Chilli Couscous – it’s just delightful! Swap the feta for some chargrilled halloumi for a fantastic barbecue dish.
Method
Prepare the couscous according to the packet instructions and fluff with a fork. Toss through half the chopped fresh mint, orange zest and a dash of juice. Leave to cool.
Fold through the watermelon, feta and the remaining mint leaves. Squeeze over a little more orange juice if you like.
