Pan-Fried Sweet & Spicy Sprouts with Chestnuts

Sweet maple syrup and our Ainsley Hot Pepper Sauce combine perfectly to make a delicious glaze for these crispy pan-fried sprouts and chestnuts. A great way to jazz up your Festive menu and a tasty accompaniment to our Jerk Roast Chicken. Feel free to add some pancetta or vegan bacon bits if you fancy and you can substitute the chestnuts for pecans or walnuts. The maple and hot pepper sauce glaze also works well on roasted carrots.

Method

Heat the oil in a large heavy-based frying pan over a medium-high heat. Add the sprouts cut-side down and cook undisturbed for 5 minutes or until lightly charred. Reduce the heat to medium, add the butter and chestnuts, season with salt and pepper and cook for another 5-7 minutes, stirring occasionally, until the sprouts are tender but still with bite.

Mix together the maple syrup and hot sauce and drizzle over the sprouts. Toss to coat and cook for another 30-60 seconds before serving.

  • 2 tbsp olive oil
  • 500g sprouts, washed, trimmed, cut in half from top to bottom
  • 180g ready-to-eat chestnuts
  • 2 tbsp butter
  • 3 tbsp maple syrup
  • 3 tsp Ainsley Caribbean Creations Hot Pepper Sauce* (adjust according to taste)
  • sea salt & freshly ground black pepper
