Quick Chicken Satay with Couscous Salad

If you’re looking for a simple and delicious recipe to make for dinner then look no further. This is a quick and easy version of Chicken Satay that’s perfect for a light meal. Our Ainsley Harriott Couscous works perfectly as an accompaniment.

Method

Heat the grill to high.

Cut the chicken into thin strips. Mix the yoghurt, peanut butter, curry paste, salt and lime juice together. Add the chicken and toss to coat in the mixture. Thread onto 6 small skewers. Place on a baking tray and grill for 12-15 minutes, turning regularly until the chicken is beginning to char and is cooked through.

Meanwhile prepare the couscous according to the packet instructions. Peel the carrot and cut into ribbons using a peeler. Slice the spring onions. Fluff the couscous with a fork and stir through the vegetables. Season with a squeeze of lime juice.

Serve the skewers on a bed of the couscous and scatter with torn coriander leaves just before serving.

  • 2 chicken breasts

  • juice of ½ lime

  • 1 x packet Tomato & Chilli or Aromatic Thai style Ainsley Harriott Couscous*
  • 1 small carrot
  • 3 spring onions
  • juice of ½ lime
  • small handful of fresh coriander, to serve
