Quick Garlic and Herb Flatbread

A quick and easy garlic bread that’s easy to make at home – a perfect accompaniment to your home cooked meals or just as a snack on its own.
Method
Place the flour, baking powder, yoghurt, oregano and salt in a mixing bowl. Mix together to form a soft sticky dough.
Turn the dough out onto a lightly floured surface and knead gently for 30 seconds. Divide into 2 and roll each piece into a circle approx 5mm thick and approximately 24cm.
Heat a large non stick pan over a high heat. Place a little oil on kitchen paper and wipe the pan to lightly grease it.
Cook the flatbreads in batches for 2-3 minutes on each side. Wrap in a clean tea towel to keep warm.
Meanwhile, melt the butter in a small frying pan or saucepan over a low-medium heat. Remove from the heat, add the garlic and parsley to warm through in the residual heat. Season with a good pinch of sea salt. Gently score the top of the flatbreads and then spoon over the garlic butter. Dust with cayenne pepper and serve immediately.

- 200g self raising flour
- 1 tsp baking powder
- 200g natural yoghurt
- ½ tsp dried oregano
- ½ tsp salt
- a little oil
- 75g butter
- 2 cloves garlic, grated
- Handful flat-leaf parsley, roughly chopped
- Good pinch of sea salt
- ½ tsp ground cayenne pepper
