
Sensational Steak Sandwich with Blue Cheese Mayo & Rocket

You can’t really beat a good steak sandwich and this one with blue cheese mayo and balsamic glaze is sensational!
Method
Preheat the oven to 110C/ and put the bread inside to warm through.
Put the cheese into a bowl and mash it up a little. Stir in the mayonnaise and mustard until well combined but still with texture from the crumbled cheese. Season with salt and pepper and a pinch of cayenne pepper and stir,
Season the steak with a sprinkle with a little of the dry oxo cube on both sides and rub in. Drizzle with a little olive oil and season with salt and pepper. Heat a large heavy based non-stick frying pan over a high heat and once hot add the steak. Cook for 3 minutes on each side for medium or cook to your liking. Remove to rest for a few minutes and then slice.
Cut the warm bread in half and rub the inside of each in the steak pan. Spread the bread halves with some of the blue cheese mayo, layer slices of steak on the bottom slices of bread, top with some rocket and drizzle with a little balsamic glaze. Pop the bread lid on top and press down gently. Carve in slices and serve on a wooden board with a serving of pickles and a bag of crisps!

- 60g blue cheese, crumbled (Stilton, Shropshire Blue)
- 6 tbsp mayonnaise
- ½-1 tsp Dijon mustard
- pinch of cayenne pepper
- 300g sirloin steak, room temperature
- olive oil
- ½ -1 beef Oxo stock cube, crumbled
- 1 ciabatta loaf or French baguette
- small bag of rocket
- balsamic glaze, for drizzling
- sea salt and freshly ground black pepper
- to serve, pickled onions, gherkins, packet of crisps
