Speedy Egg Fried Couscous with Mackerel

Super quick and super tasty, this egg fried rice with tinned mackerel is fantastic for a quick lunch. Using our couscous adds a real flavour kick and makes a lovely change from using rice and we’ve added a tin of mackerel to make this a satisfying and tasty meal that’s ready in minutes!

Method

Prepare the couscous according to the packet instructions and fluff with a fork. Set aside to cool.

Heat the oil in a wok or large deep-sided frying pan over a medium-high heat. When hot tip in the beaten egg and cook for a couple of seconds before stirring with a wooden spoon to break it up. When just scrambled push to one side and add the flaked fish to the other side and cook for a minute or two to warm through. Add the couscous and toss everything together. Add the soy sauce, sesame oil, chilli flakes and stir. Taste and add a little more soy/sesame to season if needed. Add three quarters of the spring onions and toss to warm through. Serve immediately sprinkled with sesame seeds (if using) and the remaining spring onions.

Ingredients

  • 1 x packet of Ainsley Harriott Couscous (Spice Sensation or Tomato & Chilli work well)
  • 1 tbsp vegetable or sunflower oil
  • 2 eggs, beaten
  • 1 x tin of mackerel fillets in spring water, drained and flaked
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • good pinch of chilli flakes
  • salt & white pepper
  • 3 spring onions, sliced on the angle
  • ½ tsp sesame seeds (optional)
