Spiced Turkey Skewers with Turkish Couscous & Grains & Mint Yoghurt

These low-fat and tasty turkey skewers are great for a barbecue and alfresco dining. They’re so simple to make and we’re using shop bought mint sauce to add some zing. Our Turkish Couscous & Grains make the perfect side dish, and everything is brought together with a simple yoghurt sauce for a delicious meal. If the weather’s not ideal you can cook under the grill or in a griddle pan.


You will need 2 metal skewers.

Mix the mint sauce with the yoghurt in a small bowl and chill until needed.

In a large bowl, use your hands to mix the mince with the olive oil, cumin, coriander, mint sauce, spring onions, parsley, salt and pepper. Divide the mixture into four and shape two sausage shape kebabs onto each skewer.

Heat your BBQ or a griddle pan or grill on high. Cook the skewers for 10-12 minutes, turning regularly.

Meanwhile cook the grains according to the packet instructions and fluff with a fork.

Divide the grains onto serving plates and top with the skewers. Drizzle with the minty yoghurt sauce.



  • 1 tbsp olive oil
  • 250g turkey mince

  • 1 tsp ground coriander

  • 3 spring onions, finely chopped
  • 2 tbsp flatleaf parsley leaves, finely chopped

  • 1 x pouch Ainsley Harriot Turkish Couscous and Grains

  • 150g Greek yoghurt
  • 2 tsp mint sauce
