Sumac & Pomegranate Salmon with Courgette and Tomato & Chilli Couscous
We love this easy fish recipe from Ainsley’s Good Mood Food and think it works perfectly with our Tomato & Chili Couscous. Zesty sumac and sweet tangy pomegranate molasses are a great match for salmon and this is a dish that’s easy to make, looks great on the plate and tastes delicious. A perfect meal for two.
Place the salmon fillets on a lightly oiled baking tray. In a small bowl mix together the oil and pomegranate molasses and then brush over the top of the fillets. Coat the top of the fillets with a good sprinkling of sumac. Season with salt and bake for 10-12 minutes, depending on the thickness of your fillets, or until the fish is cooked through (the flesh will flake easily).
Meanwhile, put the courgette slices into a bowl and drizzle with a little olive oil. Season with salt and toss to coat.
Heat a chargrill pan over a medium-high heat until hot and griddle the courgettes strips, for 1-2 minutes on each side (depending on the thickness of your strips) until tender but still with bite. Remove from the pan to drain on kitchen paper.
Prepare the couscous according to the packet instructions.
Put the courgettes back in the same bowl used to toss them in oil and add a drizzle of extra virgin olive oil, a drizzle of honey, the chilli flakes, mint and a good squeeze of lemon juice. Toss to coat and check for seasoning.
Divide the couscous and courgettes between plates and place the salmon to the side. Drizzle over a little pomegranate molasses and scatter with extra mint leaves and pomegranate seeds (if using) to serve.
- 2 x salmon fillets, skin on
- 2 tsp olive oil
- 1 tsp pomegranate molasses, plus extra for drizzling
- 2 courgettes, trimmed and cut into long strips with a peeler
- extra virgin olive oil, for drizzling
- drizzle of runny honey (optional)
- ½ lemon, for squeezing
- pinch of chilli flakes
- 1 tbsp chopped fresh mint leaves, plus extra to serve
- 1 x packet of Ainsley Harriott Tomato & Chilli Couscous
- pomegranate seeds, to garnish (optional)
