Sweetcorn Fritters with Guacamole

A super easy and delicious brunch or light lunch made with our Caribbean Creations Sweetcorn Fritter Mix* – just add a can of sweetcorn and water for light and fluffy fritters every time! Served with a creamy guacamole with a kick of chilli they’re sure to become a favourite.

Method

Make the guacamole. Put the avocado flesh into a bowl and mash to consistency you like. Add tomato, onion, coriander and the chilli and mix well. Stir in lime juice to taste and season with salt.

Prepare the sweetcorn fritters according to the packet instructions and fry for 2-3 minutes on either side until crisp and golden.

Serve the fritters topped with a guacamole and a dollop of crème fraiche. Finish with a scattering of coriander.

  • For the Sweetcorn Fritters
  • 1 x Ainsley Sweetcorn Fritter Mix
  • 1 x 165g tin of sweetcorn
  • 100ml of chilled water
  • oil for frying
  • crème fraiche, to serve (optional)
  • For the Guacamole
  • 2 avocados, destoned and roughly chopped
  • 1 ripe tomato, deseeded and finely chopped
  • ¼ red onion, finely chopped
  • 1 tbsp chopped fresh coriander, plus extra to serve
  • 1 green chilli or jalapeno, deseeded, finely chopped
  • 1 lime, for squeezing
  • salt
