Tuna Lunch Prep Boxes with Green Goddess Dressing

Brighten up your packed lunches with an Ainsley Couscous lunchbox. Quick and easy to make, tasty to eat and healthy too. Try this protein-packed tuna salad with our Spice Sensation or Tomato & Chilli Couscous and a herby yoghurt dressing. So simple and so tasty!


Prepare the couscous according to the packet instructions and fluff with a fork.

Boil the egg for 7 mins. Drain and when cool enough to handle, peel, and cut in half.

To make the dressing pop all the ingredients into a small processor and blitz until you have a bright green smooth dressing.

To assemble the boxes, place lines or groups of the ingredients into 2 lunch containers. Pop the dressing in a small container. Cover and place in the fridge until needed.

  • 1 x packet of Ainsley Harriott Spice Sensation or Tomato & Chilli Couscous
  • 1 x 145g tin of tuna in spring water, drained
  • handful of baby spinach leaves, washed
  • 12 cherry tomatoes, halved
  • 1 egg
  • 2 tbsp tinned sweetcorn
  • For the Dressing
  • 150ml natural yoghurt
  • ¼ green chilli
  • 1 tbsp chopped parsley
  • 1 tbsp chopped tarragon
  • 2 tsp chopped chives
