Turkish Grains with Sour Cherries & Feta Salad

This quick and easy salad has a wonderful balance of textures and flavours. It’s great for a quick lunch or side dish and also perfect for packing up for a work lunch or picnic (drizzle on the dressing just before serving). Sour cherries are available from major supermarkets or delis and they have a lovely tang which works perfectly with the Turkish spices, but if you can’t find any try cranberries, raisins or barberries.

Cook the grains according to the packet instructions. Empty into a bowl and fluff with a fork to separate the grains. Add the red onion, cherries, walnuts and chopped herbs.

Whisk together the oil and lemon juice and season with a little salt & pepper. Drizzle the dressing over the grains and scatter with the feta.
