Watermelon, Tomato & Couscous Salad with Mint & Lime

A fabulous summer salad that’s great to serve as a side dish for a barbecue or just to have as a quick and vibrant lunch. Also delicious with feta.

Method

Prepare the couscous according to the packet instructions and fluff with a fork. Set aside to cool completely.

In a large bowl mix together the watermelon and tomato and season with flaky salt. Leave to stand for a few minutes.

Whisk together the ingredients for the dressing.

Add the onion and mint to the watermelon salad and toss through the cooled couscous. Drizzle with dressing and check for seasoning.

Arrange on a serving plate and garnish with mint leaves. Serve immediately.

  • For the Salad
  • 1 x packet of Ainsley Tomato & Chilli Couscous
  • ½ small watermelon (approx. 500g), skinned and cut into 2-3cm cubes
  • 1-2 medium-large vine or heritage tomatoes, chopped
  • handful of cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • handful of fresh mint leaves, shredded, plus extra leaves to serve
  • flaky sea salt
  • For the Dressing
  • 2 tbsp olive oil
  • juice and zest of ½ lime
  • 1 tsp honey
