Whole Baked Feta with Honey, Caraway & Chilli Flakes

The sweet and salty combination of baked feta with a hint of chilli and caraway goes perfectly with our gently spiced Turkish inspired Couscous. Great as a light lunch or brunch for two or served as part of a meze selection for four.


Preheat the oven to 200C/180cFan/Gas 6.

Take a large sheet of parchment paper and place on a baking tray or ovenproof dish.

Empty the contents of the Ainsley Harriott Turkish Couscous and Grains into the centre of the parchment and scatter over the sliced shallot. Place the block of feta on top.

Drizzle the feta with olive oil and honey and sprinkle over the pul biber/chilli flakes and caraway seeds.

Fold the paper around the feta to form a parcel, tucking the edges to seal.

Bake for 20 minutes.

To serve, carefully open the parcel and sprinkle over the chopped parsley.

Serve with warmed flatbreads.

  • 1 shallot, peeled and finely sliced into rounds
  • 200g pack of Feta cheese
  • 2 tsp olive oil
  • 2 tsp runny honey
  • ¼ tsp Pul Biber or chilli flakes
  • ½ tsp caraway seeds
  • 1 tbsp chopped parsley
