Spicy Tuna & Lemon Couscous Pitta Pockets

Pitta pockets are a great alternative to a sandwich for an easy and tasty lunch. Try this easy pitta sandwich filled with a spicy tuna mayo and our vibrant Lemon, Mint & Parsley Couscous. If you like things spicy try with our Tomato & Chili Couscous for an extra chilli kick.

Method

Prepare the couscous according to the packet instructions.

Flake the tuna into a bowl and add the spring onion, chopped jalapenos and mayonnaise. Season and mash together well (add a splash of hot sauce if you like it spicy).

Lightly toast the pitta bread, cut in half and open into pockets.

Add some cucumber slices to each pitta half and fill with spoonfuls of couscous and the tuna mix. Add a splash of hot sauce on top, if you like.

  • 1 x packet of Ainsley Lemon, Mint & Parsley Couscous
  • 1 x tin of good quality tuna, drained
  • 2 tbsp sliced jalapenos from a jar, roughly chopped
  • 1-2 spring onions, finely sliced
  • 2 tbsp mayonnaise (more if you like it creamy)
  • 2 large pitta breads
  • ¼ cucumber, sliced
  • hot pepper sauce or chilli sauce, to serve (optional)
