Turkey & Black Bean Chilli with Mexican-Inspired Grains

A tasty way to spice up your festive leftovers. If you like things extra spicy add some cayenne pepper or extra chilli. We’re serving the chilli with our Mexican-inspired Tasty Grains (available from selected Morrisons) – they’re full of flavour and the perfect easy side dish.

Method

Heat the oil in a heavy-based saucepan over a medium heat and add the onion, peppers and celery. Cook for 4–6 minutes, stirring often, until softened. Add the garlic and chilli and stir for 30 seconds, then stir in the ground spices, coriander stalks and cook for 1–2 minutes, adding a splash of stock if needed.

Add the chopped tomatoes and honey and give everything a good stir, scraping the bottom of the pan. Add the beans and the stock and season with salt. Bring to the boil, cover with a lid, reduce the heat and simmer for 10 minutes.

Remove the lid and stir in the turkey. Gently simmer, uncovered, for another 10 minutes, until thickened and the turkey is heated through, stirring occasionally and adding a splash more stock to loosen if needed.

Meanwhile prepare the grains according to the packet instructions.

Stir the coriander leaves into the chilli, squeeze in some lime juice to taste and check the seasoning.

Spoon into warm bowls, top with a spoonful of sour cream and scatter with coriander leaves.

  • 1 tbsp coconut oil or olive oil
  • 1 onion, chopped
  • 1 red pepper, deseeded cut into chunks
  • 1 celery stick, trimmed and finely chopped
  • 2 cloves of garlic
  • 1 red chilli, deseeded and chopped
  • 1-2 tsp mild chilli powder
  • ½ tsp ground cumin
  • ½ tsp sweet smoked paprika
  • handful of coriander, leaves and stalks chopped
  • 1 x 400g tin chopped tomatoes
  • tsp honey or maple syrup
  • 1 x 400g tin black beans
  • 200ml vegetable or chicken stock, plus extra if needed
  • 300g leftover turkey, shredded or thinly sliced
  • juice & zest of 1 lime

  • sour cream or natural yoghurt, to serve
