Biryani-inspired Cauliflower & Tasty Grains
Inspired by a biryani this is a delicious veggie meal that’s easy to prepare with our Indian-inspired tasty Grains. A tasty meal for two that’s perfect for a met free dinner (or easily scaled up for a meal for 4). For an even easier meal you can use shop bought crispy onions.
Method
Preheat the oven to 200C/180Cfan and line a large baking tray with baking paper.
In a bowl mix together the curry paste, ginger and yoghurt. Add the cauliflower florets and season with salt and pepper. Toss to coat. Place in a single layer on a large lined baking tray and drizzle with oil. Roast for 25-30 minutes, turning halfway, or until tender and lightly charred in places. Alternatively air fry for 15-20 minutes at 180C.
Meanwhile cook the onions – heat 1 ½ tbsp oil in a non-stick sauté pan or deep-sided frying pan with a lid over a low-medium heat. Add the onions and a small pinch of salt and cook for 14-16 minutes until browned and caramelised. Remove from the pan, drain on kitchen paper and set aside.
Prepare the grains according to the packet instructions and fluff with a fork. Stir through half the onion, half the herbs and a small squeeze of lemon juice.
Serve the grains topped with the cauliflower (or mix it through). Garnish with herbs, the remaining onions and toasted almonds.
TIP: for a tasty accompaniment mix a little chopped green chilli and ½ tsp dried mint in with 100g plain yoghurt and season.

- 1 small to medium cauliflower, broken into florets
- 1 tbsp biryani or masala curry paste
- 2-3 cm fresh ginger, finely grated
- 120g Greek Yoghurt or thick plant-based yoghurt
- ground nut or vegetable oil
- 1 onion, peeled, finely sliced
- ½ lemon, for squeezing
- 1 packet of Ainsley Indian-inspired Tasty Grains or Spice Sensation Couscous
- 1 tbsp chopped fresh mint, plus extra to serve
- 1 tbsp chopped fresh coriander, plus extra to serve
- 1 tbsp toasted flaked almonds (optional)
