Bahamian-Style Coleslaw

A creamy, crunchy coleslaw with a little bit of zing and spice. Perfect with my jerk-spiced chicken.
Method
In a large bowl mix together the mayonnaise, ginger, sugar, lime juice and zest and ¼ tsp sea salt. Add hot pepper sauce/chilli to taste. Add the vegetables and mix well. Check for seasoning and add more mayo/lime juice if required. Stir through the coriander leaves just before serving.
Ingredients
- 5 heaped tbsp mayonnaise
- 3 cm fresh root ginger, grated (optional)
- ½ - 1 tsp sugar, according to taste
- juice & zest of 1 lime
- Caribbean hot pepper sauce or chopped Scotch bonnet chilli, to taste
- ¼ head white cabbage, shredded/thinly sliced
- ¼ head purple cabbage, shredded/thinly sliced
- 1 large carrot, coarsely grated
- 1 stick of celery, trimmed, thinly sliced
- ½ green pepper, thinly sliced
- ½ red onion, thinly sliced
- handful of coriander or parsley leaves, chopped
