Caprese Salad with Couscous & Avocado and an Easy Pesto Dressing

So simple and yet delicious – great for a quick lunch or to pack up to take on picnics or in lunch boxes. The salad also makes a tasty filling for wraps.

Method

Prepare the couscous according to the packet instructions. Allow to cool and fluff with a fork.

Mix together the pesto, oil and lemon juice. Season with a little salt.

In a bowl toss together the couscous, mozzarella, tomatoes, avocado and basil, alternatively arrange separately on serving plates. Drizzle with pesto dressing to serve.

  • 1 x packet of Ainsley Tomato & Chilli Couscous
  • mini mozzarella balls
  • 2-3 ripe vine or heritage tomatoes or a handful of cherry tomatoes
  • 1 avocado, sliced
  • handful of basil leaves, shredded or torn
  • 2 tsp shop bought pesto
  • 2 tsp olive oil
  • juice of ½ lemon
