Falafel, Spice Sensation Couscous & Hummus Pitta Pockets

Pitta pockets are a great alternative to a sandwich for an easy and tasty lunch. Our flavoured couscous makes a great filling, and Spice Sensation works so well with falafel and minty yoghurt in this satisfying and delicious pitta.

Method

Heat the falafel and prepare the couscous according to the packet instructions.

Meanwhile mix together the yoghurt, garlic and dried mint or chilli flakes. Season and set aside.

Toast the pitta breads and allow to cool a little. Cut in half and open to make a pocket. Spread some hummus on the inside, add some slices of tomato and cucumber and spoon in some couscous. Place 2 falafels inside and top with a dollop of the minty yoghurt.

TIP: try adding some thinly sliced red onion, olives or fet

  • 1 x packet Ainsley Spice Sensation Couscous
  • 6-8 fresh mint leaves, shredded
  • 8 shop bought falafel
  • 2-3 tbsp shop bought hummus
  • ¼ cucumber, sliced
  • 1-2 ripe tomatoes, sliced
  • 2-4 large pitta breads
  • 4 tbsp Greek Yoghurt
  • 1 clove of garlic, minced
  • pinch of dried mint or chilli flakes
