Goat’s Cheese Stuffed Dates with Pomegranate, Caramelised Walnuts and Grains Salad
Stuffed dates are a popular appetiser across the med – they’re sweet and savoury with a creamy tangy goat’s cheese filling. We’re serving the dates with our Tasty Grains, caramelised walnut and fresh pomegranate for a delightful salad. Enjoy on its own or as part of a meze.
Method
Prepare the grains according to the packet instructions.
Heat a small frying over a medium heat and add the walnuts and sugar to toast. Once they’ve turned brown, add the butter and allow it to melt and coat the walnuts. Remove from the pan.
Beat the goat’s cheese until soft and add the orange zest and chives. Season with pepper and then fill each date with the seasoned cheese.
Fluff the grains with a fork and add to a bowl along with the shallots, pomegranate seeds, parsley and walnuts.
Whisk the dressing ingredients together and season. Drizzle some over the grains and toss together. Top with the stuffed dates and garnish with more pomegranate seeds and a drizzle of dressing.

- 40g walnut halves
- 1 tsp caster sugar
- 1 tsp butter
- 75g soft goat’s cheese
- Zest of 1 orange
- 2 tsp chopped chives
- 8 medjool dates, stones removed
- 1 shallot, sliced
- Handful pomegranate seeds, plus extra to serve
- Small bunch of parsley, chopped
- Sea salt and freshly ground black pepper
- Dressing
- 3 tbsp olive oil
- 2 tbsp pomegranate molasses
- Juice of ½ - 1 orange
