Harissa-Honey Sausage, Squash & Couscous Traybake

A delicious, spiced sausage traybake that’s easy to make for a weeknight dinner or a weekend lunch. Our Tomato & Chilli Couscous has a delightful chilli kick that works well with the aromatic and spicy harissa flavour.

Method

Preheat the oven to 200c/180Cfan

Put the sausages, onion, squash and garlic into a baking tray. Mix together the oil, harissa and honey and drizzle over the top. Toss to coat. Season with salt and pepper.

Roast in the oven for 30 minutes, turning once.

Remove the sausages and squash wedges from the tray. Squeeze the garlic from its skins into the tray and add the contents of the couscous packets and the boiling water. Stir well to get any flavours from the pan. Sit the sausages and wedges on top and add the tomatoes to the tray. Roast for another 5-10 minutes or until the sausage are cooked through and the couscous has absorbed the liquid. If you like you can brown further under a hot grill for a few minutes.

Scatter with parsley before serving.
