Hot Smoked Salmon and Couscous Salad

Hot smoked salmon on a bed of a salad made with watercress, couscous, radish and avocado and finished with a mustardy dressing. A lovely, quick and delicious healthy main course salad for two that’s perfect for summer dining.

Method

Prepare the couscous according to the packet instructions.

Combine the yoghurt, lemon zest and juice, Dijon mustard, garlic and half the dill in a small bowl.

Fluff the couscous and mix through the spring onions, radishes, avocado and remaining dill. Transfer to a serving dish and scatter over the watercress. Flake the salmon into large pieces over the top of the salad. Just before serving pour over the dressing.

  • 1 packet Ainsley Sun-dried Tomato & Garlic or Roasted Vegetable Couscous
  • handful of watercress
  • 4 tbsp natural yoghurt
  • finely grated zest and juice 1 lemon
  • 1 tbsp Dijon mustard
  • 1 garlic clove, crushed
  • small bunch fresh dill, roughly chopped
  • 4 spring onions, finely sliced
  • 4-5 radishes, thinly sliced
  • 1 avocado, stoned and sliced
  • 2 hot-smoked salmon fillets
