Mediterranean Couscous Salad Pitta Pockets
Pitta pockets are a great alternative to a sandwich for an easy and tasty lunch. Our flavoured couscous makes a great filling and our Lemon, Mint & Parsley Couscous is fresh and vibrant in this delicious, chopped salad that’s full of Mediterranean flavour. The salad is also lovely as a side dish to grilled/barbecued meats, fish and veg.
Method
Prepare the couscous according to the packet instructions. Fluff with a fork and allow to cool.
In a bowl toss together the salad ingredients and feta. Whisk together the olive oil, lemon juice, garlic and oregano and season with a little salt. Drizzle over the salad and toss to coat. Add the couscous and toss again.
Lightly toast the pitta bread, cut in half and open into pockets.
Spread some tzatziki or hummus inside each pitta half. Fill generously with the couscous salad and enjoy.
TIP: add some chickpeas or chopped red/yellow pepper for a change

- For the Pitta Pockets
- 1 x packet of Ainsley Lemon, Mint & Parsley Couscous
- ¼ red onion, finely chopped
- ¼ cucumber, chopped
- handful of cherry tomatoes, halved or quartered
- handful of pitted kalamata olives, chopped
- large handful of baby spinach leaves, chopped
- 1 tbsp of both chopped mint and parsley
- 60g feta, crumbled
- 2-4 large pitta breads
- shop bought tzatziki or hummus
- For the Dressing
- 2 tbsp olive oil
- juice of ½ lemon
- 1 small clove of garlic, minced
- ¼ tsp dried oregano
