Papaya & Mango Chow Couscous

A delightfully fruity and spicy salad that’s great as a light lunch or as a side dish for grilled chicken or fish. Perfect for a barbecue and al fresco dining. Add a splash of Caribbean hot sauce or more scotch bonnet to the chow if you like things extra spicy!

Method

Prepare the couscous according to the packet instructions. Allow to cool and fluff with a fork.

Combine the papaya, mango, onion, ginger, chilli, garlic and coriander in a large bowl and toss together gently with the lime zest and juice. Season to taste.

Toss the chow through the couscous or serve the chow on top.

  • 1 x packet of Ainsley Caribbean-inspired Couscous
  • 1 papaya, thinly sliced or chopped
  • 1 mango (preferably green/unripe), thinly sliced or chopped
  • ½ red onion, thinly sliced
  • 3 cm fresh root ginger, grated
  • ½ scotch bonnet chilli, finely chopped
  • 1 small clove of garlic, minced
  • juice & zest of 1 lime
  • large handful of fresh coriander, chopped
  • salt & freshly ground black pepper
