Whipped Feta With Tasty Grains, Charred Tenderstem & Hot Honey Dressing
Delicious as a light lunch or dinner or serve as a mezze or side-dish.
Method
Prepare the grains according to the packet instructions. Fluff with a fork.
Trim the ends of the broccoli and cut any thick pieces in half vertically. Blanch in boiling salted water for 2 minutes. Drain on kitchen paper. Put in a bowl and drizzle with a little olove oil. Toss to coat.
Heat a chargrill pan or frying pan to a medium-high heat. Add the broccoli and cook until nicely browned and charred on all sides.
Meanwhile, blitz together the feta and yoghurt until smooth. Stir in the lemon juice and a pinch of back pepper.
Make the dressing by whisking together all the ingredients. Lightly season to taste.
To assemble, spread the whipped feta on the base of your serving plates. Divide the grains and place around the feta. Top with the charred broccoli and drizzle with the dressing.

- 200g Tenderstem broccoli
- 1 x packet feta cheese
- 2-3 tbsp thick Greek yoghurt
- Juice of ½ lemon
- Sea salt & freshly ground black pepper
- Dressing
- 3 tbsp olive oil
- 2 tbsp runny honey
- Squeeze of lemon juice
- ½ tsp chilli flakes
