Makes 2-4 pitta sandwiches

Za’atar Chicken & Couscous Pitta Sandwich with Hummus

Pitta pockets are a great alternative to a sandwich for an easy and tasty lunch. Our flavoured couscous makes a great filling and our Tomato & Chilli Couscous adds a tasty chilli kick to this middle eastern inspired chicken pitta. We’re using chicken breasts but feel free to use skinless & boneless chicken thighs if you prefer – just bash a little to thin them out.

Method

Sprinkle the chicken with half the za’atar. Season and toss to coat.

Heat the oil in a frying pan or griddle over a medium-high heat. Cook the chicken for 3-5 minutes on each side or until golden and cooked through. Alternatively cook in an air fryer at 180C for 7-10 minutes or until cooked through, flipping halfway through.

Meanwhile prepare the couscous according to the packet instructions. Fluff with a fork and add the parsley. Toss through.

Lightly toast the pitta bread.

When cooked sprinkle the remaining za’atar over the chicken. Spread the inside of the pitta with some hummus, spoon in some couscous, and add the chicken, tomato and onion. Top with hot sauce if you like.

Ingredients

  • 1-2 large chicken breasts, sliced in half horizontally to make thinner fillets
  • 1 tbsp za’atar
  • 1-2 tbsp light olive oil
  • 1 x packet of Ainsley Tomato & Chilli Couscous
  • 1 tbsp chopped parsley
  • 2-4 tbsp shop-bought hummus
  • 2-4 pitta breads
  • To Serve
  • sliced tomato
  • thinly sliced red onion
  • hot sauce (optional)
