Zesty Fish Finger Pitta

Try this super easy pitta sandwich filled with fish fingers and our vibrant and zesty Lemon, Mint & Parsley Couscous. To spice things up try adding a splash of hot sauce to the mayo. Great for a quick lunch or light dinner.

Method

Cook the fish fingers according to the packet instructions.

Meanwhile, prepare the couscous according to the packet instructions. Fluff with a fork.

Mix together the mayonnaise, gherkin, parsley and lemon zest. Season with salt and pepper and add lemon juice to taste.

Lightly toast the pitta bread. Make a slit along the length of each and open out to make a pocket.

Spread some of the mayo inside each pitta. Add spoonfuls of couscous to each pitta and add some salad leaves. Season the fish fingers and add to the pitta. Add another dollop of the mayo to serve.

  • 8 good quality fish fingers
  • 1 x packet of Lemon, Mint & Parsley Couscous
  • 4 pitta breads
  • Shredded iceberg or a large handful of rocket leaves
  • 5 tbsp (low fat) mayonnaise
  • 1 gherkin or 5 cornichons, finely chopped
  • 1 tbsp finely chopped parsley
  • ½ lemon, zest and a squeeze of juice
