Chilli Honey Halloumi & Couscous Pitta Pockets

Pitta pockets are a great alternative to a sandwich for an easy and tasty lunch. Try this easy pitta sandwich filled with our Tomato & Chilli Couscous, chilli honey fried halloumi and creamy hummus.

Method

Prepare the couscous according to the packet instructions.

Heat a frying pan or griddle over a medium-high heat. Heat the oil and the chilli in the pan and fry the halloumi slices for a minute on each side. Drizzle with the honey and cook for a minute longer.

Meanwhile lightly toast the pitta bread, cut in half and open into pockets.

Spread the inside of the pitta pocket with hummus, spoon in some couscous, and add some carrot, rocket and the honeyed halloumi. Drizzle with any chilli honey from the pan.

  • 1 x packet of Ainsley Tomato & Chilli Couscous
  • 1 block of halloumi, sliced into 1-2cm thick slices
  • 1 carrot, grated
  • 1 tbsp light olive oil
  • 1 medium-hot red chilli, thinly sliced
  • 3 tbsp runny honey
  • 2 large pitta breads
  • 2-3 tbsp shop-bought hummus
  • handful of baby spinach leaves or rocket
