
Air Fryer Mango Curry Spiced Chicken Thighs with Rice
Fruity and spicy, this is a tasty Caribbean-inspired delight that’s so simple to make using our Caribbean Creations curry paste and microwaveable rice*. Perfect for an easy weeknight dinner made with just a few ingredients. Delicious served with a fresh mango salsa or salad.
Method
Put the chicken thighs in a bowl and add the Mango Curry Paste. Coat the chicken in the paste, cover and set aside for 30 minutes or chill to marinate for longer if you have time.
Place the chicken in a single layer in the basket of your air fryer skin-side down and cook at 200C for 18-22 minutes**, turning skin-side up after 10 minutes, until crispy, cooked through and a deep brown.
Meanwhile heat the rice according to the packet instructions.
Serve the mango chicken thighs with the rice, garnished with coriander and with lime wedges for squeezing.

**Timings will depend on your air fryer and the size of your chicken thighs. You may also need to cook in batches depending on the size of your air fryer.

- 1 x sachet Caribbean Creations Mango Curry Paste
- 1 x packet Caribbean Creations Mixed Pepper Rice
