Air Fryer Moroccan Butternut Squash, Feta and Couscous Patties

These butternut squash and couscous patties are crispy, delicious, and easy to prepare using an air fryer. Our Moroccan Medley adds great flavour and texture. Perfect for a healthy sharing snack served with a yoghurt dip or serve with veg or a side salad for a tasty light lunch or dinner.

Method

Put the squash in a bowl and sprinkle over the cumin. Drizzle with oil and season. Toss to coat and air fry at 180C for 15-18 minutes or until tender and slightly browned. Remove from the air fryer to cool and then mash, leaving texture.

Meanwhile prepare the couscous according to the packet instructions and fluff with a fork.

In a bowl combine the squash, couscous, egg, breadcrumbs, Parmesan (if using) and crumbled feta. Season to taste and add the chilli flakes. Mix well and then use your hands to form into patties approx. 6cm diameter. You should get about 10 patties.

Lightly spray the couscous patties with oil and air fry at 180C for 8-10 minutes, turning half-way, until crispy and lightly golden. Timings will depend on your air fryer and you may need to cook in batches.

Serve with the yoghurt dip as a sharing snack or with a salad/veg as a light main course.

  • 1 small clove of garlic, minced
