Bean & Couscous Salad

A tasty and healthy salad that’s so satisfying for a quick and easy lunch – great for picnics or lunch boxes, just add the dressing just before serving.

Method

Prepare the couscous according to the packet instructions and allow to cool.

Whisk together the dressing ingredients and season.

Fluff the couscous and tip into a large bowl along with all of the salad ingredients. Toss together. When ready to serve pour over the dressing and toss together.

Ingredients

  • For the Salad
  • 1 x packet of Ainsley Sun-dried Tomato & Garlic Couscous
  • 1 x 400g tin of mixed beans or cannellini beans, rinsed and drained
  • ½ cucumber, deseeded, chopped
  • ½ small red onion, peeled, finely chopped
  • handful of cherry toms, halved or quartered
  • handful of black olives, pitted, chopped
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh mint
  • For the Dressing
  • 2 tbsp olive oil
  • juice and zest of ½ lemon
  • 1 tbsp chopped fresh basil
  • 1 clove of garlic
  • 1 tsp honey or maple syrup
